Bimini Twist Rosè is sourced from a single vineyard on the edge of the Onkaparinga Gorge in the elevated sub-region of Blewitt Springs in McLaren Vale. Expressive and fragrant with a palate of texture and interest. Production of 65 dozen.
A 46 year old bush vine Grenache vineyard from the Blewitt Springs sub-region of McLaren Vale. Hand-picked fruit was crushed and pressed immediately. Juice was racked off solids after 24 hours direct to a single 660 litre concrete egg fermenter where it was fermented and maintained on lees for 2 months. After this the wine was matured in large format old French oak for 3 months prior to bottling in August 2017.
The colour is pale salmon with light pink edge, with a delicate bouquet of fine spice, strawberry and blossom. Underlying note of wet stone and talc.
The palate is a wonderful combination of subtle wild strawberry and red berries with a soft textural palate supported by bright acidity. Savoury and mineral with juicy vibrant fruit.
Great with asparagus and fresh field pea risotto.
