Bimini Twist is a traditional fishing knot used to tie two lines together, rare in that it actually strengthens the line in which it is tied. Bimini Twist Rosé blends the traditional Rosé winemaking of pressing fruit immediately for a lighter coloured juice with the slightly more obscure method of full skins fermentation and barrel maturation. Together we think they strengthen the wine in which they are blended.
From 45 year old bush vine Grenache vineyard from the Blewitt Springs sub-region of McLaren Vale. Hand-picked fruit was crushed and de-stemmed with the final wine having a combination of immediately pressed salmon pink tank fermented rose, combined with the more coloured skin open fermented parcel. The open fermented parcel was fermented to sugar dryness on skins, pressed and put to old French barrels for four months prior to blending.
The colour is vibrant pale crimson, the bouquet bursts with aromatics of musk and sweet red berry fruits with underlying hints of sandalwood, clove and cinnamon spice. The palate is full of bright red berry fruits of raspberry and wild strawberry. The fruit flavours are complimented by the savoury complexity of seasoned oak maturation. The fermentation on skins provides notes of field mushroom and fine mouth-watering structure.
Great with beef fillet salad with beetroot, sundried tomato, fresh mint and Persian fetta.
