Both mature Shiraz vineyards are dry grown with the Blewitt Springs adding McLaren Vale richness to the wine, albeit in the most fragrant and restrained of all McLaren Vale sub-regions, whilst the Adelaide Hills adding the natural acid and tight tannin focus.
The two hand-picked vineyard parcels were open fermented separately until dry on skins with one week extended skin contact on both parcels. Pressed to three and four year old French puncheons and demi muids for 12 months of oak maturation. Whole bunch inclusion into the ferments and extended lees contact were both used to add further complexity to two great vineyard sites.
The 2014 Blood Knot Shiraz was bottled in February 2015.
Great with grilled lamb fillet.
Enjoy now but will reward cellaring in appropriate conditions for 8+ years.
